this may become boring for some of you. Since the diagnosis I've been pouring over websites looking for information about GF (Gluten-Free). I ordered 2 cookbooks last night that I hope will be helpful.
I decided that today would be the day I would try to make her some bread. She's been unhappy the last few days without "bread foods" for breakfast.
So I used Bethany's recipe for flour (2 parts brown rice flour, 2/3 part potato starch, 1/3 part tapioca flour) and followed my usual bread recipe and put it in my bread machine after a careful cleaning.
While it did produce results
Its not exactly what I was hoping would happen.
It actually is tasty
but it tastes more like biscuits or an unsweetened cake than bread.
The top is very pale in comparison to the sides and bottom which have a nice crust. As you can see its also very cracked.
The bottom did even worse than the top.
Not all the flour was mixed in.
Which is probably because the dough looked more like batter
It never formed that ball in the middle that wheat bread forms.
That does mean that GF might be easier to make though by hand as there won't be any kneading needed.
I think I learned a lot though and will make some changes next time. I'll mix all the dough/batter by hand then pour into a pan to bake. I'll try the oven next time and brush on melted butter to help the top brown up. Then I'll go from there.
Outside of GF there are other things happening in my kitchen.
I got a kefir grain from Stacey last Friday and by Monday it was yielding some nice yogurty smelling kefir. I kept Monday and Tuesdays small batches in the fridge to which I added Wednesdays along with some vanilla extract and Marionberry jam. Shook and served. It was delicious! The kids won't touch it though. I've got weird kids that won't drink smoothies. Mar has texture issues and Grey is just picky. Shawn has hesitantly agreed to give it a try.

Good luck with the kefir! I love the stuff. Bread looks good, too. Amara is just so big. Where does the time go?
Hey--I remember when Amara got her ears pierced it looks like she had it done by a professional piercer using CBRs. Was it hard to find one who would pierce her? Abby is wanting earrings (consistantly, not just sporadically asking or anything) and if I get them pierced for her I want to use a pro. I just called my go-to shop and they don't feel comfortable piercing a 3 year old. Any advice?
And finally, wrapping up the longest comment of the day, for those cookies you posted about, can you use some kind of image transfer thing or do you have to draw them yourself? I would love to make some for my work with the Starbucks Siren on them...
rebekah- My piercist would barely do a 6 yr old. Luckily I'd gotten my nose there and everyone I know goes to her so we had some rapport with which to work. Definitely don't go to a piercing gun place though. They don't heal as well.
I'm not sure about the cookies. I did post the link so you can check it out. They look delicious and fun too. I emailed them to see if they would do gluten free and she said that its not available right now.
Thank you! I think I'm putting the piercing on hold until I can take her up there and maybe once they meet her they might consider doing it in a few months or something. :o)

your bread brought back memories - it does get easier! The bread machine is good for mixes like GF pantry's favorite sandwich bread mix, but we make most homemade bread without the machine.
